Ostrich history:
Introduction:
Ostrich is the biggest bird in the world and categorized in the group of birds which don’t have good and light bones, so, bone styles, huge body and small wings.
Dry and waterless deserts of Africa, Arabian Peninsula, Egypt and Greece are counted as origins of ostrich birds. But today in South Africa, Tanzania, Somalia, Australia, New Zealand, Europe, Asia and North and SouthAmerica ostrich can be seen.
Paleontology reveals that ostrich also lived in northern part of Iran.
Kiwi, Nandu, EMU, REHA, Cassowoar are different types of ostrich.
These kinds of birds are so interested in people’s point of view and they have been lived for more than 2 million years in today’sfigure.
From 1860 ostrich production begun in south Africa. In 1959, special union with the aim of monopolizing of production and export of feathers and skin of ostrich created. In parallel some rules adopted that prohibit exportation of live bird and fertilized eggs. Nevertheless, in recent years limited numbers of live ostrich and fertilized eggsillegally to European countries, United States and Palestine.1
In 1990, with independence of Namibia some farms dedicated to nurture ostrich. These farms beganthe export of ostrich and fertilized eggs to other parts of the world. From this time industry of ostrich nurture in North America, Europe, south and east of Africa, Australia and New Zealand started and well improved through a few years.
Other products
Further than meat, skin, feather, egg and fat, eyelash of ostrich have been used to make some very luxury brushes. Powder extracted from milling of ostrich’s nail has very good abrasion strength so in cleaning of jewelry. Also, a successful report revealed successful keratoplasty between human and ostrich eyes.
Fats in ostrich oil:

Ostriches have some fat under their skin, but the main source of fat is just under their abdomen right front of feet.
Normal amount of fat extracted from slaughtered ostrich is 5 to 7 Kg, this amount in fat birds increased to 14-16 Kg.

Analysis of fatty acids in ostrich oil done by: Dr. Powel Smith, Dr. MargaretIshmit, Amanda Brown fromAuburn University.
Abstract: further analysis of ostrich oil show that about 70% of unsaturated fatty acids contained in this oil. The most common fatty acid included is Oleic acid (Omega 9), which is unsaturated acid with just 1 loop and contains about 40% of the structure. Also, ostrich oil contains two other important fatty acids (FEA). These two acids are important in human health.20% Linoleic acid (Omega 6) and 2% Linolenic acid (Omega 3).
Elixir called essential fatty acids
Omega 3 and 6 are two important and necessary types of fatty acids for human body. Necessary fatty acids referred to those types that our body is not able to produce and synthesize, so our meals are the main sources for providing it’s needed. Omega 3 and 6 considered as unsaturated multiple fatty acids. Fats divided as follows:
1. Saturated fats (without double bond): this type is solid in room temperature, e.g. butter, tail, red meat fat, Coconut Oil.
2. Single or simple unsaturated fats (just has one double bond): these fats are liquid in room temperature and are solid in refrigerator, e.g. Olive oil, almonds and peanuts.
3. Multiple or combined unsaturated fats (more than one double bond): these fats either in room temperature or in refrigerator temperature are liquid, e.g. Sunflower oil, soybean, fish, walnuts and flaxseed.
4. Trans fats: type of unsaturated fats which solidified via Hydrogenation process.
Essential fatty acids (EFA):
EFAs are group of essential fats which cannot be made in our body and must be provided via good eating regime. EFAs are unsaturated long chain acids that derivate from Linolenic, linoleic and oleic acids. EFAs divided to two main groups: Omega 3 and Omega 6. Also, Omega 9 is required for our body but it is not essential, because our body can build some of Omega 9 with using EFAs in foods. Omega 3 derivate from Linolenicacid, Omega 6 derivate from linoleic acid and Omega 9’s source is oleic acid.
Deficiency of EFA, especially Omega 3 is more common. Unfortunately in some areas of world like Iran that consumption of sea foods are low, rate of Omega 6 to Omega 3 consumption is 20 to 1.Surely, in this regime amount of Omega 3 is low.Whereas, optimum consumption rate for these two fatty acids are 1:1 or 4:1 (rate of Omega 6 to Omega 3). The minimum amount of Linolenic acid (Omega 3) and Linoleic acid (Omega 6) for an adult person are 1.5 gr for each one. Necessity of balanced usage of these two unsaturated fatty acids is their competition for Enzyme usage.
This means if consumption of Omega 6 is higher that Omega 3, and if our body just metabolized Omega 6, then Omega 3 will not be consumed.
Deficiency of EFAs and inconsistency between usage of Omega 6 and Omega 3 caused serious problems like heart failure, cancer, insulin resistance, asthma, depression after pregnancy, aging, thrombosis, obesity, diabetes, arthritis and Alzheimer.
Role of unsaturated fatty acids in our body:
1. Cell membrane mainly consists of fatty acids. Cell membrane controls the entrance of nutrients through the cells and exterior of offal out of the cell.To have a good performance in nutrients control cells must preserve fluidity, stability and integrity of itself. Cells which don’t have membrane loss the ability of control water and nutrients and communicating with other cells.Because cell membrane formed from fat, fluidity and flexibility of the cells depended to fat consumption. Using saturated fats (Hydrogenated)make cell membrane stiffer and make it more resistant to consumption unsaturated fatty acids. Omega 3’s role is so viable in the structure of cell membrane.
2. Also fatty acids have important act in better functionsof nervous, reproductive, immune and cardiovascularsystems.
3. Fatty acids contribute in many of bio-chemical Reactions of our body.
4. 60% of our brain consists of fat. Better function of brain cells and nervous systems depended to fatty acids. Omega 3 is the main compartmental part of our brain, nervous tissues and retinal.

Omega 3 (Linolenic acid)
Omega 3 has a great role in cell membrane construction and preserves their flexibility. Increase blood circulation and oxygen transfer and flexibility of red cells increased.
